Recipe from The Ludington House (except I use butter instead of margarine).

Recipe Ingredients for Cranberry Cream Cheese Muffins

1 cup butter
8 ounce cream cheese
1 1/2 cups sugar
1 1/2 tsp vanilla extract
4 eggs
2 cups flour
1 1/2 tsp baking powder
2 cups cranberries
1/2 cups pecans, chopped

Recipe Directions for Cranberry Cream Cheese Muffins

  1. In an electric mixing bowl, cream together margarine, cream cheese, sugar and vanilla.

  2. Add eggs one at a time, beating well after each.

  3. In a separate bowl, combine flour and baking powder, beat into cream cheese mixture gradually.

  4. Fold in cranberries and nuts.

  5. Spoon into 24 to 26 greased muffin cups.

  6. Bake at 350 degrees for 25 to 30 minutes.
