Yummy muffins. A serving is two mini-muffins.

Recipe Ingredients for Cranberry Corn Muffins

1 cup cornmeal
1 cup buckwheat flour (or other whole grain flour)
1/2 tsp salt
1/3 cup Splenda
1 tsp baking powder
1/2 tsp baking soda
1 egg white
3 tbl nonfat yogurt
1 cup lowfat buttermilk
1 cup cranberries

Recipe Directions for Cranberry Corn Muffins

  1. Mix dry ingredients in a large bowl. Mix wet ingredients in a small bowl. Mix dry and wet ingredients and fold in cranberries last. Cook at 400 degrees for about ten minutes in paper-lined mini muffin tins.

  2. * bluberries, rasberries, pitted, chopped cherries or sliced strawberries can be used in place of cranberries.
