Recipe Ingredients for Cranberry Coffeecake

2 cups cranberries
1 cup sugar
3/4 cup splenda sugar substitute
1 cup unbleached white flour
1 cup whole wheat flour
2 teaspoons baking powder
3/4 teaspoon salt
4 tablespoons of butter
1/2 cup unsweetened apple sauce
4 large egg whites
1 teaspoon of vanilla extract
1/2 cup skim milk

Recipe Directions for Cranberry Coffeecake

  1. Preheat oven to 350 degrees. Generally butter a 9x5" loaf pan.

  2. Pulse cranberries with 1/2 cup sugar in food processor until finely chopped; do not puree. Transfer to a sieve and let drain while you make the batter.

  3. Sift together flour, baking powder, and salt into a bowl.

  4. Combine butter, apple sauce and remaining 1 1/4 cups sugar/splenda in a large bowl and beat with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes.

  5. Add eggs one at a time, beating well after each addition, then beat in vanilla.

  6. Reduce speed to low and add flour mixture and milk alternately in three batches, beginning and ending with flour mixture and mixing until just incorporated.

  7. Spread one third of batter evenly in loaf pan. Spoon half of drained cranberries evenly over batter, leaving a 1/2" border on all sides. Top with another third of batter and remaining cranberries, then cover with remaining batter.

  8. Bake until golden brown and a wooden pick or skewer inserted in center comes out clean, 50 minutes to 1 hour. Cook cake in pan on a rack for 30 minutes.

  9. Invert cake onto rack. serve warm or at room temperature, dusted with confectioners' sugar, if desired. Enjoy!
