Recipe Ingredients for Cranberry-Citrus Muffins

2 cups chopped cranberries, fresh (about 1 bag)
1 tablespoons all-purpose flour
1 tablespoon whole wheat flour
1 cup all-purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
1 teaspoon grated lemon rind
1/2 teaspoon vanilla
2 egg whites, large
1 egg, large
1 cup (8oz carton) non-fat vanilla yogurt
1 cooking spray

Recipe Directions for Cranberry-Citrus Muffins

  1. Pre-heat oven to 375.

  2. Combine cranberries and 2 Tablespoons flour.

  3. Combine flour, sugar, baking powder, and salt into a large bowl.

  4. Whisk together in a separate bowl oil, lemon rind, vanilla, egg whites, egg, and yogurt.

  5. Make a well in center of flour mixture; add oil mixture, stirring just until flour mixture is moist.

  6. Fold in cranberry mixture.

  7. Spoon the batter into 12 muffin cups coated with cooking spray.

  8. Sprinkle with pretty sugar (large granulated) or regular granulated sugar evenly over muffins.

  9. Bake at 375 for 22-25 minutes.

  10. Remove muffins from pan immediately and place on a wire rack.

  11. These are really yummy warm!

  12. Makes 12 --- so fill up the trays to the top!
