Recipe Ingredients for Cranberry-Cinnamon Cakes

164 g Cranberries, dried
280 g Flax Seed Meal
10 g Baking Powder (2 teaspoons)
28 g Cinnamon (3 Tablespoons)
4 g Nutmeg (1 teaspoon)
12 g Splenda
3 g Salt (1/2 teaspoon)
1 g Lemon zest
1/4 cup Light Olive Oil (2 fl.oz)
250 g Egg, whole, beaten (5 medium)
3/4 cup Water, boiled (6 fl.oz)

Recipe Directions for Cranberry-Cinnamon Cakes

  1. Pre-heat the oven to 350oF or 180oC.

  2. Pour the boiling water over the dried cranberries, and leave to soak (You could use 1 Cup of fresh Cranberries - I only had the dried).

  3. Mix all the dried ingredients together, including the zest of 1 lemon.

  4. Mix the 4 large beaten eggs with the olive oil, and then mix the dry and wet mixes together, adding the liquid from the soaked cranberries if needed.

  5. Leave for a few minutes for the mix to thicken, then fold in the soaked cranberries.

  6. This mix can make 28 cakes.

  7. Using a dessertspoon of mix per cup, fill each cup of the baking sheet about half way, and bake in the pre-heated oven for approximately 10-15 minutes, or until an inserted toothpick comes away clean.
