Recipe Ingredients for Cranberry Buttermilk Scones

2 1/4 cup spelt flour
1/4 cup unsalted butter
2 tsp baking soda
1 tsp baking powder
1 large egg
3/4 cup buttermilk
3/4 cups cranberries
2 tbsp powdered sugar
1/2 tsp fresh orange juice

Recipe Directions for Cranberry Buttermilk Scones

  1. Pre heat oven to 375

  2. In large mixing bowl combine flour, baking powder and baking soda. With a pastry blender, food processor or a fork, cut in butter until mixture resembles coarse oatmeal; add buttermilk along with the beaten egg and stir to form dough. (If using a food processor buttermilk and egg can be added directly in the processor and mixed until dough forms). Gently fold in cranberries by hand. Transfer dough to a floured cutting board and press out gently with finger tips to about a 10-12" round. Using a sharp knife cut into 12 equal wedges and place on a parchment lined baking sheet. (You can also use a biscuit cutter or a cookie cutter to form shapes)

  3. Bake until golden, 30 -35 inutes. Set on wire rack to cool for 5 min. Remove to ack and cool completely. Once cooled mix powder sugar, OJ & zest. Drizzle over scones and serve.
