Recipe Ingredients for Cranberry Bread Recipe

3 cups cranberries, fresh (or frozen - thawed)
1/2 cup walnuts, chopped
1/2 cup milk
2 teaspoons orange peel
1 2/3 cups sugar
2/3 cup applesauce
2 teaspoons vanilla extract
4 eggs
1 1/2 cups flour
1 1/2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder

Recipe Directions for Cranberry Bread Recipe

  1. NOTE: original recipe called for oil

  2. Heat oven to 350 F.

  3. Grease bottoms only of 2 loaf pans (or muffin tins).

  4. Mix cranberries, sugar, applesauce (or oil), vanilla, milk, orange peel, and eggs in large bowl.

  5. Stir in remaining ingredients.

  6. Pour into pans.

  7. Bake 60-70 minutes (or less time for muffins). Cool 10 minutes.

  8. Loosen sides of loaves; remove from pans. If loaves, cool completely before slicing. Refrigerates up to 10 days.
