My Gramma used to make this a little less healthy. I've modified with wheat flour and flax seed. Be sure to grind the flax seed for the most benefits! As a fun note, she used to make the kids cut the cranberries in half so they had something to do, but it's not necessary.

Recipe Ingredients for Cranberry Bread

1 3/4 cups whole wheat flour
1/4 cups flax seed
1/2 tsp baking soda
1/2 cup white sugar
1/2 cup turbinado sugar
1 egg
1 tablespoon butter
1/2 cup orange juice
1 3/4 cups cranberries
1/2 cup walnuts

Recipe Directions for Cranberry Bread

  1. Sift together dry ingredients.

  2. Melt butter and mix with wet ingredients.

  3. Add wet ingredients to dry ingredients.

  4. Add cranberries and nuts.

  5. Bake in a greased loaf pan for 1 hour and 10 minutes at 325 degrees.

  6. While bread is warm, wrap in wax paper and place in the fridge to keep moist. Remove from fridge 1 hour before serving.
