Recipe Ingredients for Cranberry Bran Muffins

2 cups All-Bran
1 3/4 cups 1% milk
1 tbsp lemon juice
1 1/2 cups flour
2 tsp baking powder
0.33 cup brown sugar
1 large egg
0.25 cup butter
0.25 cup molasses
2 cups cranberries

Recipe Directions for Cranberry Bran Muffins

  1. Add the lemon juice to the milk, set aside 5 minutes.

  2. Then add the All-Bran cereal to the milk and set aside.

  3. In a bowl, combine flour and baking powder. You can add cinnamon if you like.

  4. In another bowl, cream the butter, brown sugar, egg and molasses.

  5. Combine the butter mix to the milk mix. Combine with the flour mixture until it comes together. Do not over mix.

  6. Fold in the cranberries or other berry (works well with blueberries too).

  7. Bake at 375 F for about 20 minutes.

  8. Cool on cooling rack, and if freezing, put in a tight-lidded container.
