I usually use whole wheat flour, but this was sooo good.

Recipe Ingredients for Cranberry Bran Muffins

2 eggs
1 cup milk
2 tbsp canola oil
100 ml applesauce
1 1/2 cups natural wheat bran
1 1/2 cups flour
2 tsp baking powder
1/2 tsp baking soda
150 g cranberries
1 cup sugar

Recipe Directions for Cranberry Bran Muffins

  1. Beat eggs, milk, applesauce, oil, molasses and sugar. Stir in bran. Let stand 5 minutes.

  2. Preheat oven to 350 (400 if your oven isn't as hot as ours)

  3. Stir together flour, baking powder, salt and soda.

  4. Add to egg mixture until combined. Stir in cranberries

  5. Spoon into muffin tins.

  6. Bake at 350 for 16-18 minutes.
