The taste is rich and tart. Try substituting finely chopped apple for half of the cranberries if it's too tart for your taste.

Recipe Ingredients for Cranberry Bran muffins

1 1/2 cups unbleached white flour
3/4 cup flaxseed meal
3/4 cup bran
1 cup brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
4 cups finely chopped raw cranberries
1 cup chopped nuts
3/4 cup nonfat milk
2 eggs
1 tsp. vanilla

Recipe Directions for Cranberry Bran muffins

  1. Mix dry ingredients. Stir in cranberries and nuts.

  2. Mix eggs, milk and vanilla and stir in. Do not overmix.

  3. Fill greased muffin cups full. Bake at 350 F. for ~20 minutes.
