Delicious snack muffin from GI diet recipe book

Recipe Ingredients for Cranberry Bran Muffin

1/2 cup bran cereal
1/2 cup wheat bran
1 cup hot water
1 cup cranberries
1 cup skim milk
1 cup whole wheat flour
1/2 cup wheat germ
1 1/4 tsp. baking powder
4 tsp. cinnamon
4 tsp. nutmeg
1 egg
1/3 cup canola oil

Recipe Directions for Cranberry Bran Muffin

  1. Combine bran cereal, wheat bran in a bowl. Add hot water, then milk and cranberries. Set aside.

  2. Combine egg, oil, and 1/3 cup sugar substitute if desired. Add to original mixture.

  3. Combine flour, wheat germ, baking powder, cinnamon and nutmeg if desired. Add to first mixture.

  4. Pour into muffin tins and bake at 350 degrees for 19-22 minutes.
