for orange juice use concentrate and let thaw.

Recipe Ingredients for cranberry blueberry muffins

2 1/2 cups whole wheat flour
2/3 cups sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/3 cup butter
3/4 cup plain yogurt
1/3 cup orange juice
2 eggs
1 1/2 cup cranberries
24 dried apricots
1 1/2 cup blueberries

Recipe Directions for cranberry blueberry muffins

  1. preheat oven 400. line muffin pan with liners or spray. combine flour, sugar, baking powder, soda and salt. cut butter into flour mixture until resembles coars crumbs.

  2. In another bowl combine yogurt, orange juice concentrate and eggs. Stir into flour mixture until just combined (do not overmix) gently stir in berries and apricots. fill muffin tins 2/3 full. They don't rise much so they can be very full. Bake 15-20 minutes until toothpick comes out clean. Cool 10 minutes then remove from tins.
