Cranberry and Blueberry Bran Muffins Recipe

This is my first muffin recipe and they are pretty healthy and filling. They're more bread like than cake like. Serves 12 small muffins (2 1/2'' diameter, 2'' high).

Recipe Ingredients for Cranberry and Blueberry Bran Muffins

1 cup all-purpose flour
1/3 cup whole wheat flour
3/4 cup wheat bran
1/3 cup light brown sugar
1 tbsp light brown sugar
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon
1 large egg white, lightly beaten
1/4 cup molasses
1 tsp pure vanilla extract
2 tbsp canola oil
1 cup buttermilk
3/4 cup cranberries
1/4 cup blueberries
1/4 cup dried cranberries

Recipe Directions for Cranberry and Blueberry Bran Muffins

  1. Preheat oven to 375 degrees F and place rack in the center of the oven. Spray the pan with a nonstick vegetable spray.

  2. In a large bowl, stir together the flours, wheat bran, sugar, baking powder, baking soda, salt and ground cinnamon.

  3. In another bowl, whisk together the lightly beaten egg white, molasses, vanilla, oil and buttermilk. If you do not have buttermilk, you can use 1 cup of whole milk and 2 tsp of lemon juice and let it sit for a while.

  4. Add the ingredients together. Stir until moistened.

  5. Add berries without crushing them. The berries can be fresh or frozen, if they're the latter, do not thaw them.

  6. Put the mix in the muffins cup so that each muffin is around the same size.

  7. Put some dried cranberries on each muffin.

  8. Bake 18 to 20 minutes.

  9. When done baking, let the muffins cool down for a while before removing them from their cups.
