Healthier version of oceanspray.com recipe. Changes include decreasing sugar (replacing half with Splenda) and adding whole wheat and fiber. Recipe states 1/3 c sugar (for purposes of correct analysis) but this should read as 3/4 cup Splenda Sugar Blend for Baking.

Recipe Ingredients for Cranberry Banana Bread

1/3 cup sugar
1/2 cup butter
2 bananas
1/4 cup milk
2 eggs
1 1/4 cup flour
1/2 cup whole wheat flour
1/4 cup wheat germ
2 teaspoons baking powder
1/2 cup chopped walnuts
1 1/2 cup chopped fresh cranberries

Recipe Directions for Cranberry Banana Bread

  1. Preheat oven to 350 degrees

  2. Grease an 8 1/2 x 4 1/2 x 2 1/2 inch laof pan. Cream sugar and butter together in a medium mixing bowl until completely blended.

  3. Add banana, milk and eggs, mixing well. Add dry ingredients, mixing just until moist. Stir in nuts and cranberries. Spread batter evenly in a loaf pan.

  4. Bake for 1 hour or until toothpick inserted into the center of the loaf comes out clean. Remove from pan and cool.

  5. makes 1 loaf.
