Recipe Ingredients for Cranberry and Avocado Chicken Salad

10 oz Skinless Chicken Breast
3.5 oz Avocados
0.25 cup Craisins, Sweetened Dried Cranberries
0.75 tbsp Coconut Oil
100 grams Mayo Mayonnaise
1.5 tsp Cumin

Recipe Directions for Cranberry and Avocado Chicken Salad

  1. Cut chicken into small cubes and saute in coconut oil, with cumin and chili powder (or your choice of spices) until done. Chill chicken.

  2. Add one chopped avocado, 1/4 cup dried cranberries, and 1 TB mayo.

  3. Mix well and chill until ready to serve.

  4. Serve with raw veggies, crackers, wraps, bread, etc.
