Muffins made with honey and "real" cranberries

Recipe Ingredients for Cranberry Apple Wheat Muffins

2 cups whole wheat flour
1 1/2 cups wheat bran
2/3 cup honey
3 tsp cinnamon
2 tsp baking powder
3 tsp baking soda
2 eggs
3/4 cup unsweetened applesauce
1 cup plain low fat yogurt
1/2 cup oil
1 cup grated apple
1 cup fresh cranberries
2 tsp grated orange peel

Recipe Directions for Cranberry Apple Wheat Muffins

  1. Combine dry ingredients.

  2. In a separate bowl whisk egg, yogurt, applesauce, oil & honey.

  3. Stir into dry ingredients until just moistened.

  4. Fold in apple, cranberries & orange peel.

  5. Bake at 325 for 18 - 20 minutes.
