Cranberry-Apple Salad Recipe

A really yummy holiday salad-not necessarily for those on a diet.

Recipe Ingredients for Cranberry-Apple Salad

2 tbsp lime juice
2 tsp Dijon mustard
1/4 cup extra virgin olive oil
2 granny smith apples,large, coarsely chopped
0.66 c walnuts, chopped
1/4 scallions, sliced
1 1/2 c dried cranberries
1 head romaine lettuce, shredded

Recipe Directions for Cranberry-Apple Salad

  1. Whisk together lime juice and mustard. Gradually whisk in oil.

  2. Place walnuts and apples in medium sized bowl. Pour in dressing and toss to coat. Cover and chill for 2 hours.

  3. Sprinkle sugar over cranberries and toss to coat. Add to apple walnut mix. Line a serving platter with lettuce and top with apple walnut mixture. Yum!
