Yummy muffins. You can also add/substitute raisins, carrots, zucchini or nuts.

Recipe Ingredients for Cranberry Apple Muffins

2 cups apples
1 1/3 cup sugar
1 cup cranberries
2 eggs
1/2 cup applesauce
2 1/2 cups whole wheat flour
1/4 cup wheat germ
3 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt

Recipe Directions for Cranberry Apple Muffins

  1. 1. In a bowl combine apples and sugar; let stand for 10 minutes. Add cranberries, eggs and applesauce.

  2. 2. In a second bowl combine flour, wheat germ, baking powder, baking soda, cinnamon and salt.

  3. 3. Stir in apple mixture until just moistened. Fill muffin tins two-thirds full.

  4. 4. Bake at 375 degrees for 25-30 minutes.

  5. 5. Cool for 5 minutes.
