This is one of my favorite thanksgiving recipes! From The One-Day-at-a-Time Low-fat Cookbook by Sharon Sassaman Claessens Makes 5 cups; serving size 1/4 cup.

Recipe Ingredients for Cranberry-Apple Fruit Compote

1 fruit (2-7/8" dia) Oranges
1 cup Sugars, Granulated
0.75 cup (8 fl oz) Water
12 oz Cranberries
3 medium apple Apples
8 oz Currants

Recipe Directions for Cranberry-Apple Fruit Compote

  1. Cube the orange with peel. Rinse cranberries. Peel, core and dice apples.

  2. Place orange cubes in a food processor and process on high until finely chopped. Place in a large bowl with cup of sugar and cup of water and stir until combined. Microwave on high 5 ? 7 minutes, until orange appears translucent. Stir in cranberries, diced apples, currents (or raisins), allspice and remaining cup sugar and cup water.

  3. Microwave on high, rotating dish twice, 10 minutes. Stir thoroughly. Microwave an additional 10 minutes, rotating dish twice. Stir well, then microwave on high 5 minutes more until thickened. Cool, then pack in sterile jars, cap and refrigerate.

  4. Note: I cook mine in the slow cooker, just throw everything in the pot, turn on low, and ejoy the fragrance all day. Mmmm.
