I eat two of these muffins for breakfast--filling and very tasty

Recipe Ingredients for CRAN-OAT MUFFINS

4 egg whites
2 eggs
1 tsp baking powder
1 tsp baking soda
1 1/2 tsp vanilla extract
1 tsp salt
2 tsp ground ginger
1 1/2 cups agave syrup
4 cups rolled oats
1 cup spelt flour
1 1/4 cups applesauce
2 cups fresh cranberries

Recipe Directions for CRAN-OAT MUFFINS

Combine eggs, baking powder, baking soda. Add agave syrup, vanilla, ginger and salt. Blend oats into wet ingredients. Let sit 5 minutes or until oats soften. Stir in flour and applesauce. Add cranberries. Bake at 350 degrees for 15-20 minutes.
