Recipe Ingredients for Craisin pumpkin quick bread

191 g. all-purpose flour
8 g. baking powder
3 g. baking soda
4 g. salt
3 g. cinnamon
1/2 teaspoon allspice
56 g. unsalted butter, softened
113 g. sugar
61 g. egg
1/2 cup skim milk
1 teaspoon vanilla
287 g. pumpkin, cooked and mashed
1 cup Kellogg's All-Bran Extra Fiber cereal
59 g. pecans, chopped
106 g. Craisins, optional

Recipe Directions for Craisin pumpkin quick bread

  1. Stir together flour, baking powder, soda, salt and spices. Set aside.

  2. In large mixing bowl, beat margarine and sugar until well combined. Add egg and vanilla. Beat well.

  3. Whisk together pumpkin and milk. Add All-Bran cereal; let cereal soften about 5 minutes.

  4. Add cereal and pumpkin mixture to main bowl, along with nuts and Craisins.

  5. Add flour mixture. Mix until thoroughly combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.

  6. Bake at 350F about 50 minutes or until wooden pick inserted near center comes out clean. Remove from pan. Cool completely on wire rack before slicing. Yield: 1 loaf, 16 slices.
