Remember not to overuse the cilantro-the taste is strong. *I use 1 pkg. Trader Joe's frozen roasted corn, thawed.

Recipe Ingredients for Craig's Black Bean and Roasted Corn Salad

3 c. cooked black beans
3 ears corn on the cob, roasted and cut from the cob
1 medium red bell pepper, seeded and diced
1 c. green onions, tops and bottoms, thinly sliced
2 cloves garlic, finely chopped
1 tbsp cilantro, chopped (optional)
1/2 c. olive oil
1/8 c. white vinegar
1/2 tsp. black pepper
1/2 tsp. Dijon mustard

Recipe Directions for Craig's Black Bean and Roasted Corn Salad

  1. Combine the laste 4 ingredients and shake well.

  2. Rinse and drain the black beans. Add next 4 ingredients and mix together. Add vingaigrette dressing ingredients and mix well.

  3. Stir again and drain before serving.

  4. May be served chilled or room temperature.
