We used these for beef wellington. In place of the puff pastry wrapped around the beef we made these crackers and placed the meet on top of it then duxelles on top of the whole thing.

Recipe Ingredients for Crackers

1 1/4 cups flour
1/2 tsp. baking powder
1/4 tsp. salt
1/3 cup warm water
2 tablespoons olive oil
10 grams oats
1 teaspoons honey
1/4 egg white (for portioning - use a whole egg white but we won't need it all in the end)
1 tbsp water

Recipe Directions for Crackers

  1. Mix the dry ingredients with the water and olive oil and knead until it forms a solid dough.

  2. Flour the dough, divide into three equal pieces and use a pasta machine to roll it out thin.

  3. Grind the oats to a flour and cook them in 1/4 cup water until it's a paste. Put the oats through a strainer to get any lumps out then add the honey and spread it between the layers of dough.

  4. Once the dough is layered with the oatmeal between the layers roll it out thin.

  5. Mix 1 tbsp water with the a whole egg white to make an egg wash and brush it on the dough.

  6. Cut the dough into 8-10 pieces and bake at 400 for 10 minutes.
