Honey-wheat bread with cracked wheat and a soft crumb.

Recipe Ingredients for Cracked wheat bread

300 grams White Flour, Unbleached
100 grams Whole Wheat Flour
2 tsp Leavening agents, yeast, baker's, active dry
1 tsp Salt, Table
1 tbsp Olive Oil
30 grams Honey
3 fl oz Water
265 grams Water

Recipe Directions for Cracked wheat bread

  1. Add 90 mL (about 3 oz) boiling water to cracked wheat and cover until all of the water is absorbed.

  2. Mix the dough as you normally would for bread, mixing in the hydrated cracked wheat before adding the water.

  3. Let rise until doubled in bulk, punch down, shape into whatever sort of loaf or loaves you want, let rise again, and bake as appropriate. For a sandwich loaf, bake at 350 F for 45 minutes.
