modified from Betty Crocker's Healthy New Choices cookbook: Whitefish and Shrimp Cakes

Recipe Ingredients for Crabcakes

16 oz crabmeat
1/3 cup green onions, chopped
1 egg white
2 tbsp parsley, finely chopped
2 tbsp yellow cornmeal
1 tbsp reduced-fat mayonnaise
2 tsp dijon mustard
1 tsp salt
1/2 tsp pepper
1 tsp garlic

Recipe Directions for Crabcakes

  1. Place all ingredients in a bowl and gently fold together.

  2. Spray skillet with cooking spray; heat over medium heat.

  3. Drop crab mixture by scant 1/3 cupfuls into skillet; flatten with spatula.

  4. Cook 4 minutes; turn. Cook 4 minutes longer or until patties are firm.
