Recipe Ingredients for Crab Stuffed Zucchini

2 medium Squash, Summer, Zucchini, Includes Skin
1 medium Squash, Summer, Zucchini, Includes Skin
4.7 grams Margarine, Regular, Hard
2 tsp Garlic Powder
6 oz Crab, Blue, Canned
0.5 cup, shredded Swiss Cheese
2.66 oz Crumbled Goat's Milk Feta Cheese
1 large Egg, White
0.25 oz Wheat Flour, White, All-purpose, Enriched, Bleached
0.75 tsp Parsley, Dried
1 tsp Paprika
1 dash Pepper, Black

Recipe Directions for Crab Stuffed Zucchini

Microwave zucchini halves for 30 seconds to 1 minute. scoop out pulp leaving 1/2 inch thick shell. arrange shells in single layer on baking sheet. Chop pulp. Melt margarine in small frying pan over mediuim high. Add onion and garlic. cook for 3-5 minutes until onlion starts to soften. Add pulp. Stir. Transfer to medium bowl. Add remaining 9 ingredients. Stir well. Spoon into zucchini shells. Bake in 375 oven for about 5 minutes until filling is set. makes 6 stuff zucchini. Serves 6 Per serving: 150 calories, 9.7 g total fat, 53 mg cholesterol, 6g carb, 2 g fiber, 10g rpo, 369mg sodium.
