Recipe Ingredients for Crab-Stuffed Portobello Caps

3 cups (3 large portobello caps, stems and gills removed)
1 egg, beaten
6 oz crabmeat
1 tbsp light mayo
1 tsp salt
1 tbsp dijon mustard
1/2 cup panko crumbs
4 oz gruyere cheese, sliced

Recipe Directions for Crab-Stuffed Portobello Caps

  1. Preheat oven to 400 degrees.

  2. With oil or nonstick cooking spray, grease a baking dish large enough to fit the mushroom caps. (I just lined a pan with foil- easier cleanup!)

  3. Mix the egg, crabmeat, mayonnaise, salt, mustard, and panko in a medium bowl.

  4. Place the mushroom caps gill side up in the baking dish and spread the crabmeat mixture over them.

  5. Place in oven and bake for 20 minutes.

  6. Top with the Gruyere slices and bake an additional 5 minutes. Let sit several minutes before serving.
