Easy to prepare and elegant to serve. Plate on a bed of baby spinach with a light lemon vinaigrette. Replace crab with double the spinach for a vegetarian meal.

Recipe Ingredients for Crab Stuffed Portabella Mushrooms

6 oz portabella mushrooms
6 oz. crab meat, drained
1/4 cup diced celery
1/4 cup diced red pepper
1/4 cup diced onion
1/4 cup chopped fresh spinach
50 g. artichoke hearts, chopped
1 oz low fat cream cheese
1 oz shredded gouda cheese

Recipe Directions for Crab Stuffed Portabella Mushrooms

Mix all ingredients except gouda, season with pepper and garlic powder and stuff into Portabella mushroom caps. Top with shredded gouda. Bake at 350F for 30 mins until gouda is melted and beginning to brown.
