Somewhat less fat (lower fat cheese and skim milk). Makes 2 pies. Serving size 1/6 pie.

Recipe Ingredients for Crab Quiche

8 oz swiss cheese
1 cup onion
2 pie crusts
1 1/2 cups lump crab meat
3 eggs
1 3/4 cups skim milk
1 teaspoon oregano
2 dash salt
2 dash pepper
2 dash cajun seasoning

Recipe Directions for Crab Quiche

Pre-heat oven to 350 degrees. Divide shredded cheese and finely chopped onion between the 2 frozen pie crusts. Mix well and leave in a pile in the center of pie crust. In separate bowl or large measuring cup, mix remaining ingredients. Pour over both pies evenly. With a fork, tamp down cheese pile enough that milk mixture covers all cheese. Wrap edges of pies in foil. Bake for 45 minutes. Remove foil to brown crusts. Continue baking 15 minutes, or until custard is almost completely set in center of pies (a knife inserted in the middle will come back out clean). Allow to cool for 15 minutes before cutting and serving.
