A low-glycemic, low-carb salad, perfect for a light, yet filling, summer lunch or dinner. (From "The Complete Idiot's Guide: Glycemic Index Cookbook")

Recipe Ingredients for Crab Louis Salad

1/2 c mayonnaise
1 tsp tomato paste
1/4 c olive oil
1 T lemon juice
2 T chili sauce
2 T chives
2 T olives
1/2 tsp horseradish
1/2 tsp Worcestershire sauce
1 T sweet pickle relish
1/4 tsp salt
1/4 tsp black pepper
6 c lettuce
3 c crab
6 hardboiled eggs
3 tomatoes

Recipe Directions for Crab Louis Salad

Combine ingredients from mayonnaise to black pepper, whisk together, and chill in the refrigerator. Prepare salad in six-serving sizes, similar to a Cobb Salad, using lettuce, crab, hardboiled eggs and tomatoes. Can also add 3 T capers for additional flavor. (I also added slices of avocado for additional nutrition and flavor.) Pour dressing over salad, and enjoy.
