Recipe Ingredients for Crab and Lemon Risotto

2 cups vegetable broth
2 spring onions
2 tbsp olive oil
2 cups arborio rice
1/2 tsp sea salt
1/2 lb lump crabmeat
1/4 cup lemon zest
1/2 cup lemon juice
1 tbsp unsalted butter

Recipe Directions for Crab and Lemon Risotto

  1. In a saucepan over medium-low heat, bring the broth, onion tops, and 2 cups of water to a gentle simmer and maintain over low heat.

  2. In a large frying pan over medium-low hat, warm the oil and minced onions. Add the rice and cook, stirring, until the grains are well coated, about 1 minute. Strain the broth mixture over the rice, discarding the onion tops. Season the rice with 1/4 tsp salt and cook at an active simmer, stirring every few minutes, until the liquid is nearly absorbed, about 20 minutes. Meanwhile, return the saucepan to low heat, adding 1 cup of water, and bring to a gentle simmer. The rice should be tender and creamy but still firm to the bite. If it is still underdone, add 1/2 cup of the simmering water and cook for 3-4 minutes longer.

  3. Gently stir in the crab meat, lemon zest, and juice, and 1/2 cup of the simmering water. Cook until the liquid is nearly absorbed. Stir in the butter, season to taste with salt, and serve.
