This salad is a great addition to your breakfast or dinner. Also great as a snack with whole grain crackers.

Recipe Ingredients for Crab Imitation (Surimi) Refreshing Salad

1 cup fresh cucumber, diced
1 cup fresh celery, diced
4 oz imitation crab meat (called surimi), chopped
4 g fresh coriander leaves (1 bunch cilantro), chopped fine
5 tbsp mayo
1 salt
1 pepper
1 dash of cumin (optional)

Recipe Directions for Crab Imitation (Surimi) Refreshing Salad

Peel and dice cucumber (remove seeds if necessary). Dice celery and chop surimi. Chop coriander (cilantro) very fine. Mix all ingredients with mayo. Add salt , pepper, and a dash of cumin. Mix again and cool.
