Quick and simple recipe for a delicious crab chowder.

Recipe Ingredients for Crab and Corn Chowder

2 tbsp Olive Oil
1 onion, chopped
1 garlic clove, crushed
3 medium red potatoes, chopped
1/2 red bell pepper, seeded and diced
2 1/2 cups vegetable broth
2 1/2 cups whole milk
2 cups cooked fresh crab meat
1 cup cooked corn kernels
1 salt and pepper to taste

Recipe Directions for Crab and Corn Chowder

  1. Heat oil in stock pot, add onion, garlic and cook for 4 minutes.

  2. Stir in potatoes, bell pepper and broth and bring to a boil

  3. Reduce heat and simmer 5 minutes (until potatoes are tender)

  4. Process half of the soup in blender.

  5. Add milk, crab and corn to the pan and heat through.

  6. Return pureed soup to pan and add salt and pepper to taste.
