Recipe Ingredients for CRAB AND CORN CASSEROLE

12 oz IMITATION CRABMEAT
10 oz FROZEN CORN
1/4 c RED FAT MONTEREY JACK
4 oz CAN DICED GREEN CHILES
240 g CORN TORTILLAS (12 CORN TORTS 6")
30 oz STEWED TOMATOES
2 tsp OLIVE OIL
1 ONION
1 tbsp MINCED GARLIC
2 tbsp CHILI POWDER
2 tsp CUMIN
2 tsp OREGANO
1 tsp CINNAMON
1/4 tsp RED PEPPER FLAKES
1/4 tsp GROUND CLOVES

Recipe Directions for CRAB AND CORN CASSEROLE

  1. SPICY TOMATO SAUCE:

  2. PLACE TOMATOES IN FOOD PROCESSOR UNTIL FINELY CHOPPED

  3. HEAT OIL OVER MED-HIHG HEAT. ADD ONION AND GARLIC. COOK AND STIR 5 MIN OR UNTIL ONION IS TENDER. ADD SPICES. COOK AND STIR 1 MINUTE. ADD TOMS, REDUC HEAT TO MED-LO. SIMMER UNCOVERED FOR 20 MINUTES UNTIL REDUCED TO ABOUT 3 OR 3 1/2 CUPS

  4. FOR EVERYTHING ELSE:

  5. PREHEAT OVEN TO 350 DEGREES

  6. COMBINE 2 C TOMATO SAUCE, CRAB MEAT, CORN, HALF OF CHEESE, CHILES IN MED BOWLS.

  7. CUT EACH TORTILLA INTO 4 WEDGES PLACE 1/3 OF TORTS IN A SHALLOW 3-4 QT CASSEROLE, OVERLAPPING TO MAKE SOLID LAYER. SPREAD HALF OF CRAB MIX ON TOP; REPEAT W/ ANOTHER LAYER OF TORT STRIPS, REMAINING CRAB MIX AND REMAINING TORTS.

  8. SPREAD REMAINING TOM SAUCE AND TOP W/ CHEESE; COVER.

  9. BAKE 30-40 MINUTES OR UNTIL HEATED THROUGH.

  10. SQUEEZE LIME OVER INDIV SERVINGS.

  11. SERVE W/ SOUR CREAM, IF DESIRED.
