Crab Chowder (Lowfat) Recipe

Makes 6 servings



Crab chowder; calls for fresh crab, but we used packaged imitation crab, and it was fine. Can also be made with 12 to 15 oz clams for clam chowder instead.

Recipe Ingredients for Crab Chowder (lowfat)

1/2 cup chopped onion
1/3 cup chopped celery
1 3/4 cup peeled, diced potatoes
1 cup water
1/4 cup cornstarch
2 cups skim milk
12 oz evaporated skim milk
1/2 tsp salt
1/8 tsp white or black pepper
1 dash of hot sauce
1 dash of paprika
1/2 pound crab meat

Recipe Directions for Crab Chowder (lowfat)

  1. Combine vegetables and water in 3 quart pot or Dutch oven and bring to a boil. Cover, reduce heat and simmer 15 minutes until potatoes are tender (10 minutes was enough).

  2. combine cornstarch and skim milk. Add this and remaining ingredients except crab and cook over medium heat, stirring constantly until thickened. Add crab meat (or clams), heat thoroughly and serve. Yield: about 3 pints
