Beautiful little seafood patties that work well as a light main course, an appetizer, or party fare!

Recipe Ingredients for Crab Cakes

8 oz white crab meat, drained weight (12 oz undrained)
8 oz imitation crabmeat, chunk style
1 egg
1/4 c light mayonnaise
5 oz bread crumbs
1/2 red bell pepper, roasted, diced and seeded
1/2 jalapeno pepper, roasted, diced and seeded
2 stalks celery, diced fine
1/2 medium onion, diced
1 tbl chives, freeze dried
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp ground cayenne pepper
1/2 tsp salt
1/4 tsp ground black pepper

Recipe Directions for Crab Cakes

  1. Start by food processor-ing the imitation crabmeat, until the pieces are fine in texture.

  2. Place the peppers on a piece of foil or a cookie sheet and roast under the oven's broiler until the skins are slightly blackened. Remove from oven, deseed the peppers, rough dice, and place in a food processor. Rough dice the celery and onion and put that in with the peppers. Run the processor until all pieces are relatively uniform in size.

  3. In a medium bowl, place the drained crabmeat, the finely chopped imitation crabmeat, and the bread crumbs. Add the chopped veges and stir until mixed well.

  4. Mix together the egg and mayonnaise in a small bowl with a whisk until smooth. Once smooth, add to the "dry" ingredients and stir until everything wants to lump up together.

  5. Form 16 balls of this "dough" into small (about 3" diameter) disks. Place in the refrigerator, covered, until ready to cook.

  6. Once you're ready to cook them, heat 1/4 C Canola oil in a non-stick pan. Bring to about 375* and cook 4 patties at a time until both sides are golden brown.
