Crab cakes from ADA Diabetes & Heart Healthy Meals for 2

Recipe Ingredients for Crab Cakes

2 tablespoons diced red bell pepper
2 tablespoons finely chopped celery
2 tablespoons grated carrot
1 medium green onion, thinly sliced
1 egg white
1 tablespoon light mayonnaise
6 oz. crab meat
1/4 cup cracker crumbs

Recipe Directions for Crab Cakes

  1. Preheat oven to 400 degrees F.

  2. In a medium bowl mix bell pepper, celery, carrot, green onion, egg white and light mayonnaise. Fold in crab meat.

  3. Line a 1/4 measuring cup with plastic wrap. Spoon in mixture and press. Coat top with cracker crumbs. Invert on baking sheet coated with cooking spray. Add cracker crumbs to bottom and sides. Repeat for remaining 3 cakes.

  4. Bake for 10 minutes; turn crab cakes over and bake another 5 minutes.
