Recipe Ingredients for Crab cakes

1 large egg
1/4 cup sour cream
2 teaspoons chili powder
1/4 teaspoon kosher salt
1 1/2 cups grated Cheddar cheese
1 lb crabmeat, drained and picked clean of shell
3 cups fresh bread crumbs
1/4 cup peanut or canola oil

Recipe Directions for Crab cakes

  1. Using a whisk, beat the egg in a large bowl with the sour cream, chili powder, and salt. Add the cheese and the crabmeat and fold everything together, using a rubber spatula. Divide into 8 mounds and firmly form into patties, about 3 inches by 3/4 inch. Put the bread crumbs in a shallow container and dredge the patties on both sides, patting off excess crumbs.

  2. Put 2 large nonstick skillets over medium heat and add 2 tablespoons oil to each skillet. When the pans are hot, add 4 patties to each pan. Fry until golden brown and hot through, turning once with a spatula, about 4 minutes per side. The internal temperature of a crab cake should read 155 F on an instant-read thermometer.

  3. Transfer the crab cakes to plates, 2 cakes per person, and serve with salsa.

  4. Tomato-Avocado Salsa Recipe below

  5. Makes about 2 cups

  6. 1 large ripe tomato

  7. 1 ripe but firm avocado

  8. 2 tablespoons plus 2 teaspoons thinly sliced chives

  9. 2 tablespoons fresh lemon juice

  10. 1 tablespoon plus 1 teaspoon grated lemon zest

  11. Kosher salt and freshly ground black pepper

  12. 1. Core the tomato, cut it in half horizontally, and gently squeeze out the seeds and excess juice. Cut the tomato into 1/4-inch dice and place in a bowl. Cut the avocado in half, remove the pit, and scoop the meat out of the skin, using a large spoon. Cut the avocado into 1/4-inch dice and add to the bowl. Add the chives, lemon juice, and lemon zest to the bowl, season to taste with salt and pepper, and stir gently to combine. This salsa is best if you don't make it more than half and hour before you plan to serve it.
