Soup that can be prepared with fresh asparagus and fresh crabmeat or canned asparagus and canned crabmeat.

Recipe Ingredients for Crab and Asparagus Soup

1/2 lb asparagus
1 tbsp vegetable oil
2 tbsp shallot, finely chopped
1 tbsp garlic, finely chopped
1/2 tsp black pepper
4 cups chicken broth, low sodium
2 tsp cornstarch
2 tbsp water
1 egg, well beaten
1/4 lb crabmeat (or 180 g can drained)
2 tbsp green onion, thinly sliced

Recipe Directions for Crab and Asparagus Soup

  1. Trim asparagus, breaking off tough base of stalk. Cut each stalk diagonally into 1 inch pieces. Approximately 2 cups.

  2. Heat oil in med. saucepan over med-high heat for 1 minute. Add asparagus, shallots, garlic, pepper and cook 1-2 minutes. Add broth, bring to a boil.

  3. In a small bowl, combine cornstarch and water, stirring to make a thin paste. Add to the soup. Stir the soup well and drizzle in the beaten egg letting it swirl to form lacy shreds. Add crabmeat, stir well. Sprinkle in the green onion, remove from heat. Serve.
