Recipe Ingredients for Crab-Artichoke Yummies

2 t whole wheat pastry flour
1/8 t dried whole thyme
1/8 t pepper
4 oz neufchatel
20 g (1/4 c) roasted red bell peppers, chopped
246 g (14-oz) can artichoke hearts, drained and chopped
8 oz fresh crabmeat, picked over for shells
152 1/4 g (24) wonton wrappers
3 T parmesan cheese
2 T minced chives

Recipe Directions for Crab-Artichoke Yummies

  1. Preheat oven to 350 degrees.

  2. Combine first 4 ingredients in a bowl and blend well. Stir in chopped roasted peppers, artichokes and crab.

  3. Coat 24 mini muffin cups with cooking spray; gently press one wonton wrapper into each cup, allowing ends to extend above edges of cup. Spoon crabmeat mixture evenly into wontons. Combine parmesan cheese and chives and sprinkle evenly on top of crab. Lightly spray wontons with olive oil spray.

  4. Bake at 350 degrees for 20 minutes or until crabmeat mixture is set, cheese melted and edges of wonton wrappers are lightly browned.
