Recipe Ingredients for CPK Chop Salad Herb-Mustard Vinaigrette

1 teaspoon garlic, minced
2 teaspoons shallot, minced
2 tablespoons dijon mustard
1 teaspoon dried oregano
2 teaspoons dried parsley
1/2 teaspoon ground pepper
1/4 teaspoon kosher salt
1/4 cup red wine vinegar
1 1/3 cups olive oil
3 tablespoons grated parmesan cheese

Recipe Directions for CPK Chop Salad Herb-Mustard Vinaigrette

  1. Process ingredients through red wine vinegar with a hend-held, propeller-blade type mixer (or use a whisk in a small bowl).

  2. Slowly blend in 1-1/2 cups olive oil.

  3. When all oil has been incorporated, stir in 3 tablespoons grated Parmesan cheese. Store in refrigerator until ready to use.
