It also calls for quinoa a whole grain rich in protein, magnesium, iron, and copper and lean ground turkey meat, high in tryptophan, an amino acid that promotes a pleasant mood and a good night's sleep.

Recipe Ingredients for Cozy Quinoa Casserole

0.5 ea. Squash Acorn
1 cup Quinoa, Organic
2 cup sliced Mushrooms, Brown, Italian, Or Crimini
500 grams Fresh Ground Turkey - Lean
2.5 cup Soup, stock, chicken, home-prepared
1.5 tbsp Olive Oil
1 large Onions

Recipe Directions for Cozy Quinoa Casserole

  1. 1.Preheat oven to 350F.

  2. 2.In a skillet, saute onion in olive oil on medium high heat for 2 to 3 minutes or until translucent.

  3. 3.Add mushrooms, squash, and garlic and cook for 2 to 3 minutes.

  4. 4.Add turkey, breaking it into small pieces as it browns, about 3 to 4 minutes.

  5. 5.Add poultry seasoning, salt, pepper, stock, and quinoa and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.

  6. 6.Transfer ingredients from pan into a 9 by 9 inch casserole dish or baking pan.

  7. 9.Bake in oven for 30 to 35 minutes
