Spice up your morning with a warm whole grain tortilla stuffed with sautéed onion, red bell peppers, turkey sausage, cheddar cheese and scrambled eggs! Served with fresh salsa and diced avocado, it?s a complete breakfast that will leave you satisfied. Vegetarian Option: Substitute black beans for the turkey sausage.

Recipe Ingredients for Cowboy Wrap

2 teaspoons canola oil
6 oz. turkey breakfast sausage, casings removed
1/2 c. red onion, minced
1 small red bell pepper, chopped
1/8 tsp. cayenne pepper
3 scallions, sliced thin
1 clove garlic, minced
4 large eggs
4 large egg whites
1/4 c. 1 % milk
1/4 tsp salt
1/8 tsp pepper
6 whole wheat tortillas
1/2 c. reduced fat cheddar cheese
1/2 c. salsa

Recipe Directions for Cowboy Wrap

  1. 1. Heat 1 tsp. oil in a 10-inch nonstick skillet over medium-high heat. Add sausage and cook, breaking it up with your spoon, until lightly browned (1 ½ minutes). Stir in onion, bell pepper, and cayenne. Cook until vegetables are tender and start to brown (5 minutes). Add scallions and garlic and cook another 30 seconds. Put in a bowl and cover to keep warm. Wipe out the skillet.

  2. 2. In a bowl, mix eggs, egg whites, milk, salt, and pepper. Heat remaining oil in the skillet. Pour in the eggs and cook them about 2 minutes while gently pushing and folding them from one side of the pan to the other. When done they should be clumped, shiny and wet. Add eggs to the bowl with sausage and mix gently.

  3. 3. Warm tortillas according to package directions. Divide the egg mixture, cheese and salsa evenly between them. Roll them into burritos and serve.
