Recipe Ingredients for cowboy stew (veggie)

46 oz canned tomatoes
1 cup red kidney beans
2 tablespoon olive oil
1 tablespoon salt
1 tablespoon chili powder
1/2 onion
2 cloves garlic
1 teaspoon chipotle pepper
500 grams gimme lean sausage style
1 bell pepper, chopped
1000 g potatoes, chopped

Recipe Directions for cowboy stew (veggie)

  1. Note: use two 15-oz cans of cooked red kidney beans for this recipe, or boil them ahead of time.

  2. heat oil in big pot

  3. sautee onions, add garlic when brown

  4. add bell pepper, sautee until tender

  5. add the rest of the ingredients and simmer until potatoes are done.
