Recipe Ingredients for Cowboy Cookies

1 c butter
1 c sugar
1 c brown sugar
2 eggs
2 c flour
2 1/2 c oatmeal
2 tsp vanilla
1 tsp baking soda
1 tsp baking powder
1 1/2 c pecans
1 c dried cranberries
1 c coconut

Recipe Directions for Cowboy Cookies

  1. Cream softened butter and white sugar, add brown sugar. Add eggs one at a time. Add vanilla and beat well.

  2. Add flour, salt, soda, and baking powder to creamed mixture. Add oatmeal.

  3. By hand, add nuts, cranberries and coconut.

  4. Roll into 1 1/2 inch balls or drop by spoon onto parchment paper.

  5. Bake at 350 degrees for 12 to 15 minutes.
