Sweet and tangy, this relish is great as a dip, on chicken or pork, or as a salad topping or side dish.

Recipe Ingredients for Cowboy Caviar

530 grams sweet bell peppers, minced
200 grams red onion, minced
235 grams pinto beans
235 grams peas, black eyed
235 grams black beans
930 grams white Shoepeg corn
2 tbs vegetable oil
2 cups water
1/2 cup apple cider vinegar
1/2 cup Splenda

Recipe Directions for Cowboy Caviar

  1. 1. Rinse beans and let stand in colander until all excess water is strained off.

  2. 2. Mince the onion and peppers into corn-sized pieces.

  3. 3. In a large mixing bowl, toss beans, onions, and peppers together with 2 tablespoons vegetable oil.

  4. 4. In a seperate small mixing bowl pour in 1/2 cup Equal granular sweetner and pour vinegar over. Mix. Stir in 2 cups water and mix well until disolved.

  5. 5. Pour the marinade over the beans, corn, and onions, cover, and refrigerate overnight.

  6. 6. Before serving, let sit in a colander until all excess liquid is strained off.
