Recipe Ingredients for Cowboy Caviar

15 oz pinto beans
15 oz black eyed peas
1 1/2 c tomatoes
1 red bell pepper
1 c red onion
1 c avocados
1 c mango
1/3 c jalapeno
1/3 c cilantro
1/3 c red wine vinegar
3 T extra virgin olive oil
1 tsp cumin
2 T garlic
1/2 tsp pepper
1 T chili pepper

Recipe Directions for Cowboy Caviar

  1. drain & rinse beans

  2. dice tomatoes, pepper, onion, avocados, jalapenos, cilantro, mango

  3. dressing:

  4. red wine vinegar, olive oil, cumin, garlic, pepper, chili pepper

  5. mix and pour over veggies
