Recipe Ingredients for Cowboy Caviar

2 cup Black Eyed Peas, Organic
2 cup Beans, Black, Mature Seeds
1 cup Corn, Sweet, Yellow
1.25 cup Tomatoes
2 tomato Tomatoes, Red, Ripe
1 medium raw Onion Red
1 medium raw Bell Pepper Green
2 oz Cilantro
3 tbsp Olive Oil
2 tbsp Vinegar red wine
0.7 lime yields Lime Juice
1 tsp Cumin
1 packet SPLENDA No Calorie
0.75 tsp Salt
0.25 tsp Pepper, Black
5 tbsp Jalapeno Slices

Recipe Directions for Cowboy Caviar

Drain beans (or prepare dry beans) and combine in large bowl with chopped tomatoes, canned tomatoes, chopped onion, chopped green pepper, minced jalapeno slices, chopped cilantro, and cooked sweet corn. In small bowl, whisk together olive oil, vinegar, lime juice, cilantro, salt, and pepper. Pour over bean mixture and toss gently. Chill for several hours before serving. Will keep for several days in the refrigerator.
