Recipe Ingredients for Cowboy Casserole

8 medium potatoes, peeled and cubed
1 1/4 lb lean ground beef
1 cup barbecue sauce
14 oz canned corn
2 cups low fat cheddar cheese, grated

Recipe Directions for Cowboy Casserole

  1. Cook potatoes in boiling water until tender. Drain. Return to pot. Mash until desired consistency, milk and butter can be used if desired although not included in the nutritional info.

  2. Meanwhile, brown ground beef in a large skillet. Drain. Add corn and BBQ sauce. Mix well. Spread in the bottom of 9x13 inch pan. Spread mashed potatoes over beef mixture as best you can. Top with grated cheese.

  3. Bake at 375 degrees for about 30 minutes until heated through and cheese is melted
